Loose versus packed? Our data covers each store's online range and does not list loose produce separately. What it does show: whole roots in a big bag are the cheap option, cut, grated or cooked roots in small packs the expensive one.
Swiss roots stay in season all winter
Swiss carrots, beetroot and celeriac are in season all year, says the Swiss vegetable producers' association VSGP. Between November and May, they come out of storage (VSGP, carrots, 2026; VSGP, beetroot, 2026; VSGP, celeriac, 2026). According to the association, carrots are also the most popular vegetable in Switzerland.
- Carrots, beetroot, celeriac: all year, from storage between November and May.
- Parsnips: Swiss season from July to March (VSGP, parsnips, 2026).
- Jerusalem artichoke: Swiss season from November to March (VSGP, Jerusalem artichoke, 2026). The organic tubers in our table were listed in September, before that season starts.
How long they keep, and how to store them for weeks
In the fridge, only beetroot keeps for weeks. Storage times according to the VSGP:
- Beetroot: 2 to 4 weeks in the fridge. Fresh beetroot keeps longer in a cool place such as a cellar.
- Carrots: about one week in the fridge, several months stored in a cellar.
- Celeriac: a few days in the fridge, a few months in a cool cellar in a box of sand.
- Parsnips: 3 to 4 days in the fridge, longer in a cool cellar in a box of sand.
Swiss campaigns against food waste add some simple tips (savefood.ch, Stiftung Pusch; foodwaste.ch, 2025):
- Cut off carrot greens, as they draw water from the root. Keep carrots without plastic in the vegetable drawer, wrapped in a cloth, and away from apples, pears and tomatoes because of ethylene.
- Buy unwashed roots when you can: they keep longer than washed ones.
- If roots come in a plastic bag, open it slightly. Trapped moisture can speed up mould and rot.
- Freeze what you cannot eat in time. Carrots can be cut, briefly blanched and frozen for up to twelve months.
Tip: Without a cellar, buy big bags mainly of beetroot and carrots, and celeriac or parsnips only for the next few days.
Three cheap ways to cook root vegetables
- Oven tray. Cut carrots, celeriac, parsnips and beetroot into pieces of similar size. Toss with oil and salt and roast until soft and browned. Half a kilo each of carrots and celeriac costs under CHF 2 at Denner's per kilo prices.
- Soup. Carrots, celeriac and parsnips all work in soups, and the VSGP also names celeriac as a base for stock. Older carrots suit soups and purées well, and the peels can go into a vegetable stock (savefood.ch). More bowls for the season: soup season starts.
- Raw salad. Grate the roots yourself. The VSGP lists beetroot raw as a salad, celeriac grated raw, and parsnips raw like celeriac. Grating at home instead of buying grated carrots saves about two thirds per kilo at Migros (CHF 1.95 against CHF 6.00).
Where Eini fits
Eini's Groceries module builds a weekly lunch and dinner plan around the week's real promotions at Coop, Migros, Lidl, Aldi, Denner and Aligro. The shopping list is grouped by store, category or recipe. With "cook once, eat twice", a tray of roots or a pot of soup becomes a second meal.
